Carolyn DiAnn (Rolak) Knighton passed away at home in San Marcos, TX on Thursday, October 24, 2024 after a hard-fought battle with uterine cancer. During her 62 years of life, she was a loving and devoted wife, mother, daughter, sister, and friend.

Carolyn was born in Houston, TX on November 7, 1961 to Barbara Lou (Nelson) and Arnold Jerry Rolak Jr. She was married in Stafford, TX on December 14, 1986 to Donovon Wayne Knighton and they shared 37 laughter-filled years of marriage together. For some community members, Carolyn will be remembered as 'the food stamp lady' for her 13 years of service to the State of Texas as an EBT Clerk. Others will remember her volunteer work with CASA to advocate for foster children in Hays County. Throughout her life she also adopted and rescued many animals. She had a deep love for wildlife and was known for her hand reared pet squirrel, Rocky, and prairie dog, Diggity; as well as for her little dog, Einstein. Her loved ones will cherish memories of her kindness, sharp wit, and irreverent sense of humor- Carolyn brought an immense joy to our lives and she will be profoundly missed.

She is survived by her husband, Donovon Wayne Knighton; son, David Wayne Knighton; daughter, Stacy DiAnn Knighton (and her husband, Steven Heller); and Carolyn's first and only grandchild, Felix Knighton Heller. She is also survived by her mother, Barbara Lou (Nelson) Shearman (and her husband, Samuel Shearman); her aunt, Carolyn (Rolak) Stalcup; her sister, Leslie (Rolak) Martlew (and her husband, David Martlew); her stepmother, Emma Rolak; and numerous cousins, nieces, and nephews. She is preceded in death by her father, Arnold Jerry Rolak Jr.; her Aunt, Linda (Rolak) Castleberry; and her brother, William 'Bill' Rolak.

Carolyn's family and friends will hold a Celebration of Life in her honor on November 16, 2024 at 313 NW River Rd, Martindale, TX 78655. Doors open and the family will begin receiving visitors at 10 am. Speakers will share their favorite stories and memories of Carolyn's life from 11 am -12 pm. Parking is limited and carpooling is strongly encouraged.
