End of Watch
End of Watch

Since 1984, the first full week of May has been recognized as National Correctional Officers Week, an important opportunity to acknowledge the courage and heroism it takes to live life as a correctional officer. The Gary Job Corps Corrections Cadets and Instructors memorialized the Texas Corrections Officers that lost their lives from 2022 to present with an “End of Watch” ceremony. President Ronald Reagan stated, “the important work of Correctional Officers often does not receive the recognition from the public deserves.” He also added that the job continues to grow more complicated and demanding. The poem 'Correctional Officer's Prayer “, was conducted by Cadet LaNaya Davis. Pictured are Instructors, Major Troy Oldbury, Captain Preston Smith, Captain Jesus Gonzalez and Cadets Emma Bennett, Jada Devereaux, Marshall Reed, Cyndy Rodriguez, Orlando Romero, LaNya Davis, Majura Abdallah, Jose Arzate, Julian Hare, Bojak Hubbard, Angel Tejeda, Jose Mendoza II, Joseph Morgan, Jose Paredes, and Kierrah Prather. THE ECONOMIST: Rural Texas is growing
THE ECONOMIST: Rural Texas is growing

The very mention of “Texas” conjures vivid images of wide-open spaces, gushers, cattle drives, cotton fields, and other stuff of legends. Despite this enduring legacy, a growing majority of population and economic activity is concentrated in metropolitan areas. Nonetheless, the rural parts of the state are generating a notable component of overall growth and, in the process, providing much of the fuel, food, and fiber that sustains us. Let’s focus on my roots and this key segment of Texas.

Reader gives meatloaf recipe a western twist

DEAR ABBY: I have seen you mention in your column your cookbooklets of favorite recipes. I hope the meatloaf recipe is included. Years ago, I cut out your meatloaf recipe, and it’s been a staple at my house ever since. I did make one significant change: I use ground bison instead of beef. It’s healthier and tastes great. Thanks, Abby, for your years of entertaining, wise words. – NANCY M. IN OREGON DEAR NANCY: I’m pleased you have enjoyed preparing (and eating!) that meatloaf, and I was intrigued that you substituted bison for the beef. I’m pleased to share the recipe again, and yes, it’s included in my cookbooklet set. I have made it for years. It makes delicious sandwiches the second day if there’s any left over.
