Roughhouse celebrates 6th anniversary

A new year means a new beer from local craft brewery Roughhouse Brewing. On Jan. 18, beer lovers trekked to the 50 acre ranch to celebrate the sixth anniversary of Roughhouse Brewing and the launch of their new fruited sour beer titled 78666. Guests enjoyed live music from The Lonesome Heroes, a popup art market from artist Rene Perez and a special anniversary menu, including the new beer and fresh food. The brewery also released a new line of merchandise with designs from Graham Franciose and live screenprinting from Print This.

Roughhouse Brewing was founded in 2019 by the Pasternak’s on their family’s 50 acre ranch on the outskirts of San Marcos. Construction started in 2018 where the family built a barn that houses the brewery, bar and kitchen as well as an expansive outdoor area with seating, a stage and a fireplace. The mom and pop brewery specializes in foeder-fermented ales, traditional lagers and cave-aged beers. The brew team at Roughhouse is constantly experimenting with new flavors and techniques, including using an underground cave on property to age beer. “We’re aging a one year old, a two year old, and a three year old, and we’re blending them together to create this kind of complex, funky beverage,” Alex Pasternak said.

Roughhouse creates an anniversary beer each year, launching their 78666 fruited sour beer with an ABV of 7.8666%. The anniversary beer is made with raspberries and dark chocolate with a heavy sour bite and a jammy sweet finish.

“There’s a little kiss of blackberry in there too,” Pasternak said. “We just wanted something fun and really memorable. So it’s very jammy. It’s very fruit forward.”

The process to make the anniversary beer featured many steps. The brewmasters start by brewing a base dark, strong ale. They then introduce fruit and bacteria to the brew that sours the beer inside an oak foeder which is a large wooden barrel used to age and store beer. Cacao nibs were added at the end of the fermentation process to retain the chocolate aromas. The sugars from the fruit help to referment the beer which helps retain the flavor.

From the beginning the Pasternak’s knew they wanted unique packaging. They partnered with Austin artist Graham Franciose who has illustrated designs for many of the beer releases over the years.

“[Franciose uses] a lot of nature in his art and has a really cool, whimsical vibe that feels very in line with what we were hoping to do at the brewery,” Pasternak said.

The watercolor artist was able to take themes of nature found around the brewery such as scorpions and incorporate them into a quilt like pattern that aligns with the newer Roughhouse logo.

Roughhouse wanted to support local artists during their anniversary party as well by showcasing The Lonesome Heroes, an americana band whose members include San Marcos musicians. Local painter Rene Perez had a pop up art show where guests could purchase his original paintings as well as stickers themed around the flora and fauna of San Marcos. Roughhouse partnered with local screenprinters Print This who offered live screenprinting. Customers could choose from shirts or hats of various colors that featured Graham Franciose’s artwork.

One does not have to wait until the next anniversary to explore the craft beers at Roughhouse. The brewery offers weekly events and deals such as Eat ‘em up Thursdays, which offers steep discounts for students, faculty, staff and alumni of Texas State University. There is a comedy showcase on the second Thursday of each month as well as a free yoga class offered the first weekend of each month. The San Marcos Runners Club hosts a Sunday Run Day that’s open to the public every Sunday at 10:30 a.m. Once the weather warms up, Roughhouse will be offering monthly brewery tours for those interested in the beer making process.
